3-Day Whiskey Workshop – Old Harbor Distillery – $2,000

Saturday, April 2 through Monday, April 4, 2016

This three-day hands-on class cover the fundamentals of whiskey distilling. Participants will be able to smell and taste new-make spirit as it is being distilled. Topics covered in this class include mash preparation, basics of fermentation and wash production, mechanics of distillation (stripping & spirits runs), “making the cuts”, barrel maturation, proofing, and bottling.

Includes:
– 3 days of hands-on distilling instruction at Old Harbor Distillery
– Transportation to/from the hotel and distillery
– Lunches

1-day Fermentation Workshop – Monday 4/4/16 OR Thursday 4/7/16 – $400

Explore the science of fermentation in this one-day workshop at White Labs corporate headquarters in San Diego, CA. Topics covered will include:

  • maintaining optimal yeast performance
  • developing desired flavor compounds
  • off-flavor detection
  • troubleshooting problem fermentations
  • Practical session: rum sensory – distilled by Malahat Spirits featuring 4 different White Labs yeast strains

Includes:
– 1 days of hands-on fermentation  instruction at White Labs
– Transportation to/from the hotel and the White Labs facility
– Breakfast refreshments
– Tour of the White Labs facility

1-day Gin Workshop – Monday 4/4/16 OR Thursday 4/7/16 – $400

 This one-day hands-on class explores designing and distilling your own gin. As well as more formal instruction, the session will allow attendees to discuss the more nuanced aspects of bringing a spirit to market. Topics covered in this class include the mechanics of distillation and rectification, making the cuts, methods of gin production, working with botanicals, and filtration.

– Transportation to/from the hotel and distillery

 1-day Rum Workshop – Monday 4/4/16  OR Thursday 4/7/16 – $400

This course will introduce participants to the different styles of rum created from sugar cane and its derivatives, such as sugar cane syrup and molasses. Participants will be able to smell and taste new make spirits as it is being distilled. Topics covered in this one-day class include rum wash preparation, basics of fermentation, mechanics of distillation (stripping and spirit runs), making the cuts, barrel maturation, proofing and barreling.

 1-Day Rye Whiskey Workshop – Monday 4/4/16OR Thursday 4/7/16 – $400

This one-day hands-on class cover the fundamentals of rye whiskey distilling. Topics covered in this class include mash preparation, basics of fermentation anatomy of a still and distillation, cuts, maturation etc.

Includes:

– 1 days of hands-on distilling instruction at Twisted Manzanita
– Transportation to/from the hotel and distillery
– Lunch


1-Day Vodka Workshop – Monday 4/4/16OR Thursday 4/7/16 – $400

This class examines the fundamentals of Vodka production, and how to work with both fermented grapes and NGS Bases. Topic covered in this class includes the mechanics of distillation and rectification, making the cuts and filtration of neutral spirits.

– 1 days of hands-on distilling instruction at California Spirits Co
– Transportation to/from the hotel and distillery

1-day Blending Workshop – Monday 4/4/16 OR Thursday 4/7/16 – $400

This class examines traditional philosophies and methods of blending whiskey and rum, and “cross-over” techniques in blending and borrowing from one tradition to the other to create something new. During the hands-on portion, we will cover the practical applications of blending, selecting and balancing the proper components for the blend to achieve a targeted whiskey or rum profile, and the impact on flavor of spirit and wood.

1-Day Complete Distillery Design and Codes –Monday 4/4/16 ONLY – $400

The seminar begins with a presentation of several potential distillery plans and pointing out the different features.  Participants are asked to bring with them PDF plans of their existing or planned facility which we will put on the screen and analyze in a design charrette format making comments and suggestions on how to comply with codes and reduce the cost impact of code compliance.  Those who choose to have their plans on the screen will be given a copy of the mark up we make to take with them.

Presenters will be available after the seminar for up to 24 hours, or the end of the convention, to meet with any of these attendees one to one for consultation specific to their distillery. This seminar does not address TTB issues, other than as they may relate to space planning.

1-Day Hands-On Still Building and Distilling Mechanics Workshops –Thursday 4/7/16 ONLY – $400

Attendees will be offered a crash-course on how to safely build their own professional still and other cost-saving tips. We will discuss how stills work, the history of the still and how to build a 500-litres still for under $3,000.  Attendees will also get to tinker with desktop stills.
